About The Texas Pit BBQ

Our Story

Serving authentic Texas-style BBQ beef, ribs, and chicken prepared, cut and packaged at 3 take-out St. Thomas locations.


Established in 1983.

Texas Pit BBQ started feeding late-night revelers on Charlotte Amalie's Waterfront in 1983. Texas Pit Owner Bill Collins opened the 2nd location at Red Hook Plaza, near the Red Hook Ferry, in 1986. Texas Pit BBQ became a staple with Islanders over the next decade. Out of popular demand, the Sub Base location opened in 1998 and the 4th Texas Pit take-out location opened in 2000 at Wheatley Center (now closed).


Native Texan Bill Collins arrived in St. Thomas in the early 80's as a contracted yacht captain transporting a vessel from Panama and consequently got stranded while waiting for payment. He found work restoring sailboats but kept thinking "this place really needs some good ribs." His first catering job used the stranded yacht's galley for food preparation. Within a few months, he was paid for his transportation service and decided to set up a mobile location on the Charlotte Amalie Waterfront every evening. Word of his BBQ spread and the rest is history.
"We do everything we can as we did it 30 years ago, it's just more volume now." Collins attributed his growth to customer demand. "It was all about convenience based on customer needs, not upgrading the business," Collins said of his expansion out east to Red Hook, then to Sub Base and Wheatley Center.
Built on a commissary approach, all the meats and sides, except for the chicken, are cooked in one location and then shipped out to the other serving locations.
